Stef's BETTER IT SYSTEMS tiramisu

Serves 4

  • 5 eggs, separated
  • 180g caster sugar
  • 300g mascarpone
  • 250ml cold strong coffee
  • 3 tablespoons brandy or sweet marsala or whisky
  • 36 Small Italian sponge fingers (savoiardi)
  • 80 g dark chocolate finely grated.
  1. Beat the egg yolks with the sugar until sugar is dissolved and mixture is light and fluffy and leaves a ribbon trail
  2. Add the mascarpone and beat until smooth
  3. In a clean, dry bowl whisk the egg whites until soft peaks form.
  4. Fold the egg whites into the mascarpone mixture
  5. Pour the coffee into a shallow bowl and add the brandy
  6. One by one dip biscuits into the coffee and line the bottom of your bowl or tray. Don’t let the biscuits soak so much that they break up.
  7. Spread a layer of mascarpone mixture over the first layer of biscuits. Repeat with another layer of biscuit.
  8. Cover the top of your dish with a layer of mascarpone.
  9. When you are ready to serve finish with grated chocolate on top.
