Kathleen's chocolate mousse with chocolate ‘dirt’


  • 300 g dark chocolate, chopped
  • 50 g unsalted butter
  • 3 eggs, separated
  • 55 g caster sugar
  • 300 ml thickened cream, whipped


  • 125 g caster sugar
  • 125 g almond meal
  • 75 g plain flour
  • 50 g cocoa
  • 60 g unsalted butter, melted
  1. For the mousse, combine chocolate and butter in small saucepan and stir over low heat until smooth. Remove from heat and stir in the egg yolks, one at a time. Transfer mixture to a large bowl.
  2. Whisk egg whites to soft peak stage. Add sugar and whisk until sugar dissolves.
  3. Fold the whipped cream into chocolate mixture then fold in egg white mixture in two batches. Divide between 8 cups (I use clear disposable glasses) and cover with cling film. Refrigerate for two hours until set.
  4. For the dirt, preheat oven to 150° C. Line baking tray with greaseproof paper.
  5. Mix all dry ingredients in a bowl and add the melted butter, mixing until it looks like soil. Bake for 10-15 mins.
  6. Cool before dividing into the 8 cups. Add mint leaves to look like plants.
